350g Katsuo Fillet - sashimi-grade bonito with skin (12¼ oz)
150g New Onion (5¼ oz)
30g Spring Onion Leaves, Chopped (1 oz)
1 tsp Ginger Root, Grated
3~5 Shiso Leaves
2 cloves of Garlic

- Sauce -
3 tbsp Soy Sauce
1½ tbsp Vinegar
1½ tbsp Lemon Juice
1 tbsp Dashi Stock
(1 tbsp water+a pinch of dashi stock powder)
1 tsp Ginger Root, Grated


かつおのたたき(3人分)
<材料>
かつお(皮付き刺身用):350g
新玉ねぎ:1/2個(150g程度)
青ねぎ:5本(30g)
おろし生姜:小1
大葉:3〜5枚
にんにく:2片

たれ
・ 醤油:大3
・ 酢:大1と1/2
・レモン汁:大1と1/2
・ 和風だし:大1 (水に顆粒だしの素ひとつまみ)
・おろし生姜:小1
