Today in Moto's Kitchen we are making a summer treat: Shiso Granita! Granita is a classic Italian shaved ice, but we are spicing up this recipe with some Japanese fusion. By combining the light, fragrant flavors of shiso and lime, this dish is a perfect way to refresh and relax after a hot day in the sun. Shiso is a Japanese herb, typically used as a garnish on dishes like sushi or sashimi. It has a freshness and fragrance similar to that of mint that pairs very nicely with citrus flavors like lemon or lime. Enjoy!
Ingredients:
Water
Sugar
Shiso
Limes
Sugar Syrup/Simple Syrup:
Combine 1 ½ cups of water and ½ cup of sugar and heat until the sugar has dissolved. Set aside to cool before combining with the shiso-lime mixture.
Preparation:
Start by roughly chopping the shiso, about 10 leaves or so, and then putting it in a food processor until it is finely chopped. Next, combine the juice of 3 limes with the shiso in a bowl. Add about a cup of the sugar syrup. Stir the mixture together and pour into a shallow pan or dish to freeze.
Serving:
Once frozen, use a fork to shave the ice into a big bowl. Fluff up the granita with a big spoon prior to serving. Using an ice cream scooper, scoop the granita into a bowl and enjoy!
Tip: Taste the mixture as you pour in the syrup for sweetness and sourness. Add more syrup to your liking!
