Today in Moto's Kitchen we're making a festival favorite, dorayaki, which is created by sandwiching two pancakes and filling it with red bean paste. In Japanese, "dora" means gong and "yaku" means to cook. Learn how to make this famous gong-shaped dessert and enjoy it!
Ingredients:
Cake Flour
Honey
Eggs
Mirin
Sugar
Baking Powder
Soy Sauce
Water
Red Bean Paste
Preparation:
Crack three eggs in a bowl and mix it together. Add 100 grams of sugar, a tbsp of baking powder, and mix well. Now add 1/4 cup of water, a tbsp of soy sauce, a tps mirin, and a tbsp of honey. Mix them together then add 150 grams of cake flour and sift it into your bowl. You want to do this a little bit at a time and mix it so it doesn't lump. Rest the batter for half an hour so everything can incorporate.
Cooking:
After resting the batter, it is time to cook. On a frying pan, drop the batter about a foot up into the pan, that way it will create a good round shape. Like a pancake, you want to wait until it bubbles up. You may want to leave it a little longer to attain a perfect golden color on the outside. When the pancake bubbles up, flip it and do the same to the other side. Putting a coating of non-stick spray on your spatula is a good way to make sure the batter doesn't get stuck on the spatula. Once the pancake is done cooking, repeat the process again to make the bottom part of the sandwich.
Serving:
Once you have cooked the pancake. Spread red bean paste on top of the bottom pancake and then sandwich another pancake on top. Enjoy your dorayaki!
Tip:
-Dropping the batter from a reasonable distance (say one foot) would give the pancake a nice round shape.
-Making one pancake at a time may be more time-consuming than making two, but it is much easier to control. So try not to rush.
