Salmon Hamburg Steak Recipe with Refreshing Grated Daikon Radish

We're making hamburg steak using lightly-salted salmon which is available all year round. This ponzu with the grated daikon goes well with the salmon hamburg. It's delicious!

How to Make Salmon Hamburg Steak

(serves 1) Cook Time: 30 minutes

1 piece Lightly-Salted Salmon, net weight 100g/3.5 oz
1 tsp Sake
Pepper

20g Onion, chopped (0.7 oz)
15g Fresh Shiitake Mushroom, chopped (0.5 oz)
15g Enoki Mushrooms, chopped (0.5 oz)

Cake or All Purpose Flour
1 tsp Olive Oil, slightly less than 1 teaspoon
1 tbsp Sake, to help cook the meat, substitute: water

80g Daikon Radish, grated (2.8 oz)
1 Spring Onion Leaf, chopped
2 Shiso Leaves

Ponzu Sauce, or add an equal amount of soy sauce to yuzu or lemon juice

Red Leaf Lettuce Leaves
Tomato Wedges
